Basics: Bean Prep

Ingredients
- Beans - black, pinto, chickpeas, great northern, giant, kidney, black-eyed peas, lima, pinto
- Water
Method
- Soak beans in water for at least 8 hours.
- Place beans in pot and cover with water.
- Bring to a boil.
- Let it boil for 5 minutes. Drain and rinse beans.
- Place the beans back into the pot. Pour new water into the pot to cover beans by 1 inch.
- Bring to a boil.
- Reduce heat to medium, partly cover with lid, and let it boil for at least 45 minutes or until beans are soft. Stir occasionally.
- Test for doneness: Scoup up a couple of beans with a spoon and blow on them - the skin should curl and wrinkle.
- Once soft, turn off the heat and drain any remaining water.
Tips
- Add beans to salad or follow up by putting them in the oven.
- Most types of beans need this prep
- Forgot to soak beans? No prob, you'll just need to let them boil for longer.
- Cooking times may vary depending on beans selected.
